A note regarding our pricing;

I know the price of our key lime pies for overnight shipping is quite high, one might wonder how this can be justified. I will begin by saying that the cost of the pie itself is $25.00, the very same as you would pay if you were walking into our shop and purchasing one over the counter. That cost, the $25.00 for the pie, is easily justified in the quality of our product, the quality of the ingredients and the quality of our work. Considering the ongoing hikes in dairy and the fact that our product consists mainly of dairy (in the form of the sweetened and condensed milk and butter), we're still trying to keep those costs as contained as we possibly can.

The other costs associated with the overnight shipping are fixed costs, the bulk of it being in the shipping itself. We have an arrangement through a third party that keeps our costs lower than usual, but still, the overnight shippers are getting the bulk of the money you are spending. Without the tremendous volume required to get deep discounts, this is the best we can do. Then there is the containers themselves, the refrigerant to keep the pies cold and the time needed to process and package the pies (often referred to as handling charges).

In all honesty, the overnight shipping is a real pain in the you-know-what. There are times when I feel as if it is hardly worth the effort; the monetary return is negligible, and if there are any pies that are lost or undelivered, the result is that I end up losing money (the shipper NEVER loses). Honestly, I feel that my overnight shipping is more of a public service than anything; the public cannot and should not be denied a real, genuine, authentic key lime pie.

I can understand people balking at the prices, and there are alternatives out there, but it is a buyer-beware situation and ultimately, you get what you pay for! We have not received the accolades from the press and the culinary community we have by making an inferior product. You can't get a Cadillac pie on Yugo prices. I hope this helps you understand why it costs as much as it does, but rest assured, you are getting (to quote the New York Times) "The BEST Key Lime Pie, Mason Dixon Line or NO!"
